I am not going to beat around the bush, this mousse is a straight up variation of this chocolate orange mousse that I made last year. Only I subbed the orange zest for peppermint extract.
The chocolate mint combo is always a winner, and mousse form makes it even easier to shovel into my mouth. Plus, absolutely no dairy, because, yep, avocado to the rescue again!
I could bleat on about me and avocados but if you have been around these parts for any length of time you will know all about it and I don’t want to go all repetitive on you, so . . .
By handy coincidence (and saving you all from ramblings about avocado) the lovely Gabriela over at Cooking Without Limits gave me the Starlight Blogger Award (which was created to highlight and promote inspiring bloggers : so no pressure there, then), and it comes along with three questions to answer. So while you look at pretty pictures of mousse, I will answer them. They are a bit ‘deep’ though, so I will do my best to answer them flippantly in order to avoid any real ‘deep and meaningfuls’ . . .
Q1) What do you think is your best quality?
A1) Hmmm . . . I am never comfortable answering this kind of question, because I really don’t know. It is always easier for someone else to say what they think your best quality is. Although then you run the risk of them not being able to think of anything! I’d like to think that I am kind and considerate. That’s a good quality, right? Oh, and I try my best to be positive in all situations (I am a natural worrier in the extreme, so it is good practise for me, because being a worry-wart is not a good quality).
Q2) What is your favourite place to relax?
A2) Ha! This one is easy. At home, in my pyjamas. As simple as that. Also helps if there is a bubble bath thrown in too!
Q3) Are you happy with your life?
A3) Ah, the eternal question! I always try to remember the saying “comparison is the thief of joy” because it is utterly true. If you start comparing your life – or anything for that matter – to others you will (probably) never be happy with what you’ve got. On the whole, yes, I am happy. I’m healthy (I think / hope), I have a roof over my head and food in my tummy. Those are the fundamentals. Yes, there are areas that I would like to change / improve, but on the whole I don’t have much to complain about.

Mint Chocolate Mousse (dairy-free & vegan)
Ingredients:
- 3 (very) ripe avocados
- 50g good quality cocoa powder
- 50ml water
- 100ml maple syrup
- 2 tsp coconut sugar (or regular sugar if you prefer)
- 2 tsp vanilla extract
- 3 tsp pure peppermint extract
- fresh mint leaves to garnish, optional
Method:
- Place all the ingredients into the bowl of a food processor and blitz until smooth, scraping down the sides a couple of times if necessary.
- Scoop into bowls / small ramekins and either serve straight away or chill in the fridge until needed. Decorate with the mint leaves if using.

So, awkward questions successfully navigated… slight disappointment we haven’t discovered any interesting nuggets of info! I mean, we KNOW you’re nice, and kind and have an unnaturally close relationship with your pyjamas and that you’re altogether too worried about the small stuff. Oh well… *Love* recipes like this, because I usually have all the ingredients. Can I put in a request for you to develop a Murray Mints flavoured version, with caramel as well as mint in the flavour profile? If you do, I can pretty much guarantee I’ll be eating it every week…
